Zingerman's 5th annual Camp Bacon celebrates all things bacon - from bacon makers, producers, poets, historians and musicians - all brought to you in a full day of learning, eating and fun. The Main Event is changing venues this year, moving out to Cornman Farms in Dexter, MI and begins at 7:30 am for breakfast. We have a full day planned with special guest Bob and Tanya Nueske, Raul Martin, Amy Emberling, Nancy Newsom and more.

— What is Camp Bacon? —

Camp Bacon is a fundraiser in Ann Arbor, MI for Southern Foodways Alliance that brings together Bacon-Lovers, -Makers, Cooks, Curers and anyone who likes to learn, eat and enjoy cured and smoked pork belly. Curious? I hope so. Camp Bacon is four days of all things bacon — eating, learning, listening, tasting and talking; a pork-centric party that features everything from poetry to pigs.

Country Ham... Smokehouse aged, naturally cured, a Kentucky ham handcrafted by "the Ham Lady", Nancy Newsom. Zingerman's Camp Bacon and Zingerman's Roadhouse welcome the Ham Lady herself to kick off the weekend of bacon events at The Bacon Ball, a special dinner centered around bacon, ham and all things good that come from the pig. Nancy's country ham and aged prosciutto type ham will take center stage and the Roadhouse will create a menu highlighting Nancy's delicious meats.

This dinner brings in bacon and ham lovers from all over the country, space is limited, reserve early!

Price includes food, tax and gratuity. Beverages additional and purchased at the dinner.

We'll be using the power of bacon to flavor three amazing baked goods, all in honor of Zingerman's Guide to Better Bacon (available at all Zingerman's locations). You'll make a similar version of our wildly popular peppered bacon farm bread, bacon cheddar scones found in the book and bacon pecan sandy cookies. You'll leave BAKE! with a few tested recipes, the knowledge to recreate them at home, and everything you made in class.

The Sunday Artisan Market in Kerrytown

A three-hour street fair with an array of vendors selling, sampling and showcasing all things bacon — a great way to have lunch, sample new bacon wares, or just have some fun with bacon-based games for kids of all ages. Donation to 4-H suggested to enter the street fair; vendors sell their fare directly to Campers.

Nancy Newsom


the Lucinda Williams of country ham is making the drive up from western Kentucky. Her family has been curing pork in North America for nearly 400 years, and she is the only commercial producer still using only totally traditional methods. Aside from that the woman writes poetry and has enough strongly held opinions to fill the entire day's program! And of course, her country ham is one of the best you'll ever taste.

Bob Nueske


The Johnny Cash of Bacon made a rare public appearance at last year's Camp Bacon. Dressed all in black like his hero, Bob's salty wit and well cured wisdom were the hit of the show. Happily, Bob had so much fun that he's signed up to come back! And he's bringing his daughter Tanya (who, carrying my musical analogy forward, must by rights the Roseanne Cash of bacon"). Both will share the Nueske story, talk about what makes their bacon so special, and what it's like to grow up in the first family of bacon.

Steve Carre


Coming all the way from Down Under, Steve will share stories of the world of bacon and pork in Australia home of Lance Corporal bacon and other obscure (to us) delights as well as sharing his family's recipe for a traditional Aussie Christmas ham.

Raul Martin


Coming from Spain to share the story of the Iberico pigs and the cured pork that comes from them. The Ibericos, if you aren't familiar with them, are probably the most prized pigs in the world. Their acorn eating and free grazing activity make their meat something beyond special. The Fermin family has been curing pork.

Giovanni Bianchi


Third generation ham curer from Parma and an amazing blues musician to boot (as far as I know the only Italian ham curer who can also play the blues), Giovanni is coming all the way from Italy to share his passion and experience with curing world class Parma hams!

Cristiano Creminelli


His family has been curing pork in the Italian Alps since the 1600s and the family firm is one of the best known producers of artisan salumi in the country. In 2007 Cristiano brough the family's four hundred years of experience to the US and set up pork curing shop in Utah. Cristiano will share thoughts on Northern Italian salumi and on what it's like to craft traditional Italian recipes here in the US.

Amy Emberling


Managing partner of Zingerman's Bakehouse, Amy will share a whole set of tips, insights and recipes on baking with bacon and lard.

Ari Weinzweig


In 1492 the Spanish Inquisition gave the country's thousands of Jews an ultimatum: convert, leave or die. Many went through formal conversion processes but secretly remained Jewish in spirit if not in private practice. Zingerman's co-founding partner will give a history of these Converso Jews and their “porkways."

Susan Schwallie


You know what you eat, but ever wonder what the rest country's consumers are doing with bacon? Susan Schwallie is the Executive Director of Client Development at the NPD Group, a nationally known consumer trends company based in Chicago. Susan has a high passion for all things pork. She's coming to Camp Bacon to share a whole set of consumer trends and statistics about pork and bacon consumption and marketing.
